Una de nuestras delicias menorquinas es la coca dulce,ya sea con manteca ya sea con mantequilla o bien como la que os presento hecha con la masa de la coca bamba,muy parecida a la ensaimada.
Podemos realizarla con cualquier fruta veraniega o con simplemente espolvoreada con azúcar y anís y si además la acompañamos de una buena taza de chocolate ya será una delicatesse.
Se que con este calor es díficil ponerse delanta el horno pero el resultado merece la pena,así que vayamos con nuestra receta de coca de frutas.
INGREDIENTES:
600 grs. de harina aproximadamente.
25 grs. de levadura panadería.
1/2 vaso de aceite girasol.
3 huevos.
150 grs. de manteca de vaca.
2 patatas hervidas sin piel.
150 grs. de azúcar.
Leche tibia para fundir la levadura como 1/2 vaso.
Ciruelas y cerezas.
PREPARACIÓN:
Comenzamos por hervir las patatas.
Haremos la masa,si disponemos de amasadora pondremos primero la harina,la manteca a temperatura ambiente,
el aceite,la levadura disuelta en la leche tibia,los huevos bien batidos,por último añadiremos la patata bien
triturada con el tenedor mezclandole el azúcar para que no nos haga grumos.
La cantidad de harina es orientativa,ya que en este tipo de masas siempre añadiremos más cantidad de la indicada,
la masa tiene que ser manejable.
Una vez tenga la masa consistencia vamosa estirarla dándole la forma deseada, y dejaremos leudar,con el calor
será rápido.
Una vez haya leudado le añadiremos la fruta elegida,en este caso he utilizado ciruelas y cerezas y espolvorearemos
por encima azúcar en grano.
Introducimos al horno precalentado 180ºC unos 40 mts aproximadamente.
